This tried and tested Boozy Funfetti Cake and Berry Parfait is so yummy–I kind of want to keep it to myself. But I guess I’ll share…

Y’all. My hubs has been on the road for FAR too long :s I can’t not wait for him to be home for snuggles, long talks and most importantly to function as my “guinea pig” for some food experiments 😀

I don’t always need someone to taste test though! Like with this Boozy Funfetti Cake and Berry Parfait! I’m sure you can tell just by looking at it, that its flipping tasty!

** This recipe is for 1 portion of dessert – so be sure to multiply the ingredient amounts according the number of servings you are making

What You Need to Make Boozy Funfetti Cake and Berry Parfait

  • ½ C Funfetti cake recipe or vanilla cake recipe, prepared, room temperature
  • ¼ C Strawberries
  • 1 TB Sugar
  • 1/8 C Candy Hearts
  • 1 Tablespoons of Orange Brandy
  • Whipped topping

I just use the box mix I typically use for birthday cakes–it tastes amazing and there’s no sense in breaking out the cake flour, vanilla extract, egg whites and all that. So much work to break out the stand mixer just to make a single cake layer that I’m going to smash. Be like me and grab a box. LOL!

If you like a little thicker whipped topping than you can get from the tub-o-whipped-topping, I have a little trick for turning heavy cream into a tasty treat: In a large bowl, mix 1 cup of sugar, 1/2 cup of heavy whipped cream and 1/2 cup of sour cream. I know–but wait. If you whip it until it’s light and fluffy, you’ll have a thicker, creamier whipped topping and you’ll never taste the sour cream.

How to Make Boozy Funfetti Cake and Berry Parfait

Prepare confetti cake batter as directed on the box and bake. Remove from the oven when a toothpick inserted in the center comes out clean. Let cool completely.

Cut strawberries up into a small dice, approximately the size of a pea and place them in a medium bowl.

Sprinkle the sugar over the fruit and set aside to macerate for approximately 10 minutes.

Place candy hearts in a plastic sandwich bag. Crush them with a mallet or rolling pin, or even the blunt end of a hammer. Set aside.

Crumble the confetti cake into the base of the serving dish, lightly sprinkle the top of the cake with Brandy

Sprinkle a pinch of crushed candy hearts over each portion of the cake
Spoon the strawberries over the cake.

Then spoon the whipped topping over the strawberries. Garnish with a few left over sprinkles of candy hearts.
