Breakfast! I’m actually getting better at remembering to eat something before noon! Imagine that right? I’ve shared my breakfast struggles before, and I continue to add to my breakfast recipe repertoire! Like this Strawberry Banana Breakfast Oats recipe! Easy, quick and delicious and the perfect start to your day!

Strawberry Banana Breakfast Oats

Oats of some sort was pretty standard when I was growing up. My Mom was pretty good about experimenting and trying different flavor combinations, but we almost always fell back on cinnamon raisin oats. This days, I’m trying to expand my breakfast horizons, trying new flavor profiles and  combinations!

And as much as I love my overnight oats, and I really, really love my overnight oats, some mornings just call for a warm and cozy sort of breakfast to start the day! This Strawberry Banana Breakfast Oats recipe is just the ticket!

Strawberry Banana Breakfast Oats Ingredients:

  • 4 cups cooked steel cut oats
  • 3 tbs almond or sunflower seed butter
  • 1.5 cups sliced bananas (1.5-2 bananas)
  • 1 cup sliced strawberries
  • 1/2 chopped walnuts
  • 1/4 cup shredded coconut
  • Dairy free chocolate chips (optional)

Strawberry Banana Breakfast Oats Directions:

Cook the oatmeal according to package directions.
Divide into bowls and stir in the almond butter.
Prep/cut the fruit.
Top with bananas, strawberries, walnuts and coconut (and chocolate chips is desired)

Looking for a slightly sweeter taste? Add in one tablespoon maple syrup or local honey to each bowl.

This breakfast recipe has been on repeat the last week or 2… sometimes I just need something warm, cozy and flavorful to start off the day! Even in the crazy heat of a Texas summer, a warm breakfast is just want I need to fuel my day!
