I love a sweet, but hearty breakfast to start the day. And if it can be put together in less than 20 minutes, even better! This carrot cake waffle recipe is just such a breakfast!
I love adding shredded carrots to various recipes that I make through out the week – dinner salads, spaghetti sauce, breakfast muffins, just to name a few! So when I am shredding carrots for something that I’ll be having at dinner time, I’ll often shred a few extra cups worth to make these carrot cake waffles in the morning!
It saves time, and mess, in the process of making my morning waffles. Winning!
Despite the fact that these waffles are a sweet way to start the day, they’re pretty hearty and filling! 2 or three of these in the morning (I may or may not save the second half of the batter for myself for lunch of breakfast the following day) is the perfect way to fuel the day! And they pair perfectly with with a cup of coffee!
Filled and fueled until it’s time for lunch, I call these carrot cake waffles a breakfast win!
Carrot Cake Waffles
Makes – 6
Ingredients
- 2 cups of White Whole Wheat Flour
- 2 teaspoons of Baking Powder
- 1 teaspoons of Baking Soda
- 2 teaspoon of ground Cinnamon
- 1 teaspoon of ground Nutmeg
- Pinch of Salt
- 3 large Eggs
- 2 cups of Buttermilk
- ¼ cup of melted Butter
- ¼ cup of Maple Syrup
- 1 cup shredded Carrots (about 2 medium sized)
- ¼ cup of Raisins
- ¼ cup of chopped Walnuts
Maple-Walnut Cream Cheese Frosting
- 8 oz. of Cream Cheese, softened
- ¼ cup of Maple Syrup
- ¼ cup of chopped Walnuts
Instructions
Shift together white whole wheat flour, baking powder, baking soda, cinnamon, nutmeg and salt. Keep it aside.
In a large bowl, combine the buttermilk, melted butter, maple syrup and the eggs. Beat it till fluffy.
Gradually add in the sifted flour mix. Gently fold it in.
Add the shredded carrots, raisins and the chopped walnuts. Fold it in.
Preheat waffle iron.
Grease both the plates with melted butter. Ladle about ½ cup of the batter in the middle of the waffle iron. Cook according to your waffle iron’s instructions. Generally about 3 to 4 minutes.
Transfer the cooked waffle to a plate. Keep warm.
Repeat with the rest of the batter.
Maple-Walnut Cream Cheese Frosting
While the waffle is cooking, combine the softened cream cheese, maple syrup and chopped walnuts in a large bowl.
With an electric beater, beat it till smooth and fluffy.
To Serve
Dollop a tablespoon of the maple walnut frosting on a warm waffle. Drizzle additional maple syrup if desired. Enjoy with your morning coffee, tea, milk or juice.
