I love this easy everything breakfast muffin recipe. It’s so simple, anyone can make it, and it’s just like everything bagels!

And, because this isn’t your typical breakfast muffin recipe, you’re not looking at combining flour, sugar, baking powder or baking soda. All those dry ingredients? Replaced by actual chunks of everything bagels.

This easy everything breakfast muffin is flavorful, filling, and is also perfect for a quick and filling lunch or dinner-on-the-go!
What do you need to make the Everything Breakfast Muffin Recipe?
- 4-5 everything bagels, cut into cubes
- 1 package of Smithfield bacon sausage or 1 pound of ground sausage, browned until no longer pink
- 2 cups half and half
- 10 large eggs (have you tried wild eggs? I need to…)
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons Everything Bagels Seasoning, divided
- 4 ounces of cream cheese, diced (1/4 cup)
- 4 ounces shredded swiss cheese (1/4 cup)
- 4 ounces shredded cheddar cheese (1/4 cup)
- Chives, sesame seed, poppy seed or melted butter for garnish, if desired
How do you make the Everything Breakfast Muffin Recipe?
Preheat oven to 350 degrees. Spray a 12-cup muffin pan or tuck in your paper liners.
Step 1: In a large bowl, combine the half and half and eggs.
Step 2: Add in the salt, pepper and 1 tablespoon of Everything Bagels Seasoning. Set aside.
Step 3: Put all ingredients together, as if to make an assembly line.
Step 4: Layer each muffin cup as follows: 3-4 bagel cubes, sausage, 4-5 pieces of cream cheese, a sprinkle of the swiss and then cheddar cheese. Now add the egg mixture to about halfway. Now add 4-5 bagel cubes and a bit more sausage and sprinkle remaining Everything Bagels Seasoning over each.
Step 5: Place in oven and bake for 45-55 minutes, or until browned and the muffins are no longer soft in the middle. If you like yours more browned, you can place under the broiler for 2-3 minutes (but keep an eye on them so they don’t burn.
Step 6: Remove from oven and cool. Top with a sprinkle of the everything bagel seasoning.
