This easy everything breakfast muffin is flavorful, filling, and is also perfect for a quick and filling lunch or dinner-on-the-go!

What do you need to make the Everything Breakfast Muffin Recipe?

  • 4-5 everything bagels, cut into cubes
  • 1 package of Smithfield bacon sausage or 1 pound of ground sausage, browned until no longer pink
  • 2 cups half and half
  • 10 large eggs (have you tried wild eggs? I need to…)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons Everything Bagels Seasoning, divided 
  • 4 ounces of cream cheese, diced (1/4 cup)
  • 4 ounces shredded swiss cheese (1/4 cup)
  • 4 ounces shredded cheddar cheese (1/4 cup)
  • Chives, sesame seed, poppy seed or melted butter for garnish, if desired

How do you make the Everything Breakfast Muffin Recipe?

Preheat oven to 350 degrees. Spray a 12-cup muffin pan or tuck in your paper liners.

Step 1: In a large bowl, combine the half and half and eggs. 

Step 2: Add in the salt, pepper and 1 tablespoon of Everything Bagels Seasoning. Set aside.

Step 3: Put all ingredients together, as if to make an assembly line. 

Step 4: Layer each muffin cup as follows: 3-4 bagel cubes, sausage, 4-5 pieces of cream cheese, a sprinkle of the swiss and then cheddar cheese. Now add the egg mixture to about halfway. Now add 4-5 bagel cubes and a bit more sausage and sprinkle remaining Everything Bagels Seasoning over each.

Step 5: Place in oven and bake for 45-55 minutes, or until browned and the muffins are no longer soft in the middle. If you like yours more browned, you can place under the broiler for 2-3 minutes (but keep an eye on them so they don’t burn.

Step 6: Remove from oven and cool. Top with a sprinkle of the everything bagel seasoning.

This everything muffin is so easy and fun. It's like having an everything bagel with a little more of, well, everything!

Cook Time 45 minutes
Total Time 50 minutes

Ingredients

  • 4-5 everything bagels, cut into cubes
