Red Velvet Cookies

Wanna hear something crazy? I had never tried Red Velvet Cake until I moved to Texas! Nuts right? my hubby me introduced me to the wondrous thing that is red velvet and I’ve been hooked ever since! And I don’t just limit myself to cake either, Red Velvet Cookies are my newest addiction!

Ingredients

1 pkg. Red Velvet Cake Mix

1 Stick Butter, softened

2 Eggs

16 oz. Cream Cheese

7 oz. Marshmallow Crème

1 Cup Powdered Sugar

Instructions

Preheat oven to 375˚.

In a bowl combine the Cake mix, Butter and Eggs, mix until well combined.

Using a rounded tablespoon at a time roll into balls and place on a lightly greased cookie sheet.

Bake at 350˚ until just slightly browned on the bottom 10-12 minutes.  Remove and cool completely.

In a bowl beat together the Cream Cheese and Marshmallow Crème until smooth.  Slowly beat in the Powdered sugar until well combined.

Keep cookies in an airtight container and topping in the refrigerator until ready to serve.

Put the topping in a piping bag with a star tip.  Start piping at the middle of the cookie and work out in a spiral.

Easy Right? And let me tell you, these red velvet cookies pack a heck of a lot of flavor! These are a sure hit with my hubs and that man is hard to impress when it comes to baking! I’m sure your family will love them too!
