
I’m sure you’ve been looking for a tasty way to cool off during the hot summer. Well, look no further than these divine Strawberry Shortcake Popsicles. They are so easy to make, taste amazing, and- bonus, look adorable too. They are definitely a great summer treat, but also a great treat to bring to a summer cookout or to enjoy after a day full of activities. Let’s find out how to make this delicious recipe!
How to Make Strawberry Shortcake Popsicles
To get started with this yummy recipe, you will need just a few ingredients:
- 1 cup of strawberries
- ½ cup of milk
- ¼ cup of ice cream/cool whip or yogurt
- 3 shortbread cookies crushed
These are SUPER easy to make. First, you will want to place your strawberries, milk, and your ice cream/cool whip or yogurt into the blender. There’s no “right” combination here! Some days I feel like ice cream and other days I want yogurt.
Blend all three ingredients until smooth. Some blenders have different options like low, medium, high or smoothie. Make sure you’re picking the right one to get started. If I’m unfamiliar with the blender, I usually start with low and then work my way up to test it out.


Once you have your mixture at the right consistency, pour it either into dixie cups or popsicle molds, if you have them. Either will work!
The mixture should be evenly poured into Dixie cups. If some are a little uneven, you can smooth it out with a spoon.

Sprinkle those delicious crushed cookies on top of your Dixie cups or popsicle molds. Gently press them into the mixtures— but don’t submerge them completely. You still want the cookies to be on top.
Stick popsicles into the middle of the cups or molds. Freeze these yummy popsicles overnight!
The next day you can run the cups under some hot water (not too hot!) to help loosen it so you can free the popsicle from the mold. If you used Dixie cups, you should be able to tear the cup away. Easy peasy!
Popsicles are ready to serve!
Strawberry Shortcake Popsicles

Make these creamy cool shortcake popsicles with just a few ingredients!
Ingredients
- 1 cup of strawberries
- ½ cup of milk
- ¼ cup of ice cream/cool whip or yogurt

Instructions
- Place strawberries, milk and ice cream/coolwhip or yogurt into a blender and blend until smooth
- Pour into dixie cups or popsicle molds
- Sprinkle the crushed cookies on top and gently press down
- Freeze overnight
- When you are ready to serve run molds under hot water, or simply peel the paper of the dixie cups
