Mint chocolate chip ice cream is one of my all time favorite treats, so you can imagine just how much I LOVE these Mint Chocolate Chip Ice Cream Muffins!

Mint chocolate chip ice cream is one of my all time favorite treats, so you can imagine just how much I LOVE these Mint Chocolate Chip Ice Cream Muffins!

Moist, minty, and so delicious, these Mint Chocolate Chip Ice Cream Muffins are a delicious treat! Especially if you’re in the mood for some delicious ice cream, but there isn’t enough to share! Just use that bit of ice cream to whip up your own batch of yumminess!!

Mint Chocolate Chip Ice Cream Muffins Recipe:

Ingredients:

  • 1 cup flour, spooned and leveled
  • 1 cup oat flour
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 stick butter, melted and cooled
  • 1 ½ cup mint chocolate chip ice cream, melted but not hot
  • 1 large egg, room temperature
  • 1/3 cup mint chocolate chips or crushed Andes Mints candies
  • 8-10 drops green food dye

Directions:

Preheat your oven to 350 degrees F.

Prepare a muffin tin with liners or grease.

In a food processor or blender, add old fashion oats and blend until they reach a flour like consistency.

Next, in a large bowl, sift together the oat flour, sugar, baking powder, baking soda, and salt.

Grab your small saucepan, and heat butter until beginning to brown.

In a large mixing bowl, add ice cream, melted butter, and egg and mix together.

Add the food dye to ice cream and mix until evenly green.

Add the flour mixture to the ice cream mixture and mix until just combined.

Pour batter into the muffin tin, filling each just under 3/4s of the way full.

Bake for 30-33 minutes or until an inserted toothpick comes out clean.

Remove the baked muffins from the hot tin promptly and allow to cool completely.

Store in an air tight container, in a cool place. These muffins should be good for 5 to 7 days, if they last that long 😉

I love that these are minty, with out being TOO minty. And with just the right of sweet chocolate! These delicious muffins are a chocolate mint lovers dream! (yes. that would be me!)

These muffins are such a tasty treat and an easy way to indulge in something sweet! The whole family will love these yummy Mint Chocolate Chip Ice Cream Muffins!
