With all of the holiday celebrations coming up, being far away from my family can be especially hard. I miss them like crazy! Fortunately, thanks to modern technology, I can schedule coffee dates via Skype and stay connected to the people who matter most! These moments of connection make the miles disappear and my slightly homesick heart feel a just little less homesick 🙂 Of course there is always yumminess of some sort involved, this time I whipped up a homemade pumpkin spice latte to savor while I chatted with my sister Emily.

I love to drink my “fancy” coffee… and if I can make it at home it’s even better!

Here’s what you need…

Coffee-mate Pumpkin Spice Creamer
Extra Strong Coffee
Milk
Whipped Cream
Canned Pumpkin
Pumpkin Spice

In a microwave safe container (I use a mason jar) mix 1/4 cup of milk and 4 tablespoons of the Coffee-mate Pumpkin Spice Creamer. Add 1 tablespoon of canned pumpkin and whisk into milk/creamer until completely blended. Heat for 45 to 60 seconds. Pour heated milk/creamer/pumpkin mixture into your favorite mug, and fill with extra strong, black coffee. Stir until blended. Garnish with whip cream and pumpkin spices.

Something this yummy is best savored along with some overdue sister chat, wedding planning, and family news reporting. Of course, its best if you can share this yummy pumpkin spiced latte with your coffee date in person, but if not, they can make their own… cause you’re nice enough to give them the recipe and tell them what they need in advance 🙂

Before you know it an hour or 2 will have passed and the coffee will be gone…

But your heart will be happy! Besides, you can always make yourself another latte and chat some more!

Sometimes in this crazy, busy, hectic part of the year, the best thing we can do for ourselves is stop, enjoy a cup of our favorite “fancy” drink and spend time with the people who matter the most! Its pretty much the only thing that keeps my from going completely crazy some days!

    I'm a big fan of Chai Lattes. Starbucks is my favorite and I have tried to re-create it at home with little success. I will keep trying though. I love having my neighbors over for coffee (or going to their houses) so we can let our little ones play while we get ready for the day!
