Hearty Vegetable Beef Soup

There is nothing quite like a bowl of your favorite soup, especially when you’re feeling less than awesome. The hubs has been battling a flu bug for the past week or so, and all he wanted to eat was our favorite hearty vegetable beef soup! So whats a good wife to do? Hearty Vegetable Beef Soup Ingredients:

2 pounds lean ground beef
1 Large onion, Diced
1 16 oz can of corn
1 16 oz can of sweet peas
1 large potato, diced
1 Jar Mezzetta’s Napa Valley Homemade – Roasted Garlic & Caramelized Onions Sauce
1 16 oz can beef broth
1/2 cup macaroni noodles (if desired)
Salt, pepper and garlic powder to taste.

Directions:

In a large pot, brown your hamburger meat, season with salt, pepper and garlic powder. Add in diced onion. Cook until meat is totally browned and onions are translucent.

Drain grease.

In the same pot add Napa Valley Homemade – Roasted Garlic & Caramelized Onions Sauce, fill the jar half full with water (swirl it around to get ALL the saucey goodness) and add to pot. Stir in beef broth. Bring to a simmer.

Add in macaroni noodles (if desired) and potatoes. Simmer for 10 minutes, or until noodles are 2/3s cooked.

Add in canned veggies. Return to a gentle simmer for at least 15 minutes.
