Easy Game Day Entertaining with a Taco Bar

Football and I go WAY back, like wayyyyyy back. My dad played in highschool (and had a scholarship for college too, but blew out his knee senior year), so I was pretty much born with a love for the game. Sundays during football season were pretty much my favorite! Church in the morning, lunch and then watching the game with my Dad – some of my favorite childhood memories of home!

Its been a LONG time since I’ve been able to relive some of those memories with my Daddy, so imgine my joy when I found out he was going to be here for a weekend visit, during football season! Dad arrived last friday, and we spent most of the weekend chatting, working on some house projects (he’s handy and offered to pitch in, much to the Hubs delight) and touring around our small Texas town. Sunday afternoon though, was ALL about the games!

Of course watching football with Dad required some seriously good food… Texas style!

The most important part of any good taco bar? AMAZING Queso of course! And with a little help from Ricos condensed cheese (which has 50% more product once mixed correctly), homemade queso is easier than ever!

Easy Homemade Queso Recipe:

1 can Ricos Condensed Cheese (available at Walmart!)
1 can Diced Tomato and Chiles
1 teaspoon taco seasoning
1/4 cup of water

Ricos Condensed Cheese

In a medium pan, add all ingredients and stir over medium heat.

Bring to a low simmer for 2 minutes and then remove from heat. Serve while warm.

Voila! The easiest queso you’ve ever made! Even my Texas born-and-raised, picky-eater of a husband approves of this easy queso! So you KNOW it has to be good!!!! I even made a second batch a few days later just for date night snacking!

Now on to that taco bar for easy game day entertaining!

While my queso was simmering, I cooked up some ground beef with taco seasoning, chopped some veggies (green onion, lettuce, red bell pepper and tomatos) and set out taco shells, soft tortillas, and picante sauce. Then all we had to do was make our tacos the way we wanted! Mine was loaded with veggies, slathered in queso and SO DANG GOOD!

We spent the rest of the day chilling on the couch, cheering on our teams of choice, and munching on yummy tacos! It was the perfect afternoon, easy game day entertaining and a wonderful new memory made with my Dad and Hubs. What more could a girl want?
