I’m a big fan of EASY and delicious recipes. This recipe for Easy Double Chocolate Cookies checks all my got-no-time-to-bake-but-need-something-sweet boxes!

I mean really – it’s all right there in the name… Easy = winning! Double chocolate = double winning!

Also, the husband (who if you’ve read any of my other recipe posts you’d know he’s a notoriously picky eater) LOVES these!

Win. Win. Win!

While I’m not always a fan of cake mix cookies, this sweet recipe is definitely one of the exceptions.

Easy Double Chocolate Cookies Ingredients:

1 box Chocolate cake mix
2 Eggs
½ C Butter, softened
1 tsp Vanilla
½ C White chocolate chips
(optional – 1/4 C mini semi-sweet chocolate chips to really AMP UP the chocolate and take these to triple chocolate territory)

Easy Double Chocolate Cookies Directions:

Preheat the oven to 375 degrees.

Grab a mixing bowl or your stand mixer’s bowl and empty the cake mix in there. Add in the butter and vanilla extract.

In a separate bowl or glass measuring cup, add your eggs and give them a quick whisk with a fork to break the yolks.

Add the whisked eggs to your cake mix, butter and vanilla. Whip with a stand mixer or electric beaters, until well combined.

Spoon out the cookies onto a silicone baking mat lined baking sheet or a parchment lined baking sheet.

I like to use a cookie scoop (approximately 2 tbsp) so that all the cookies are uniform in size.

Using a fork, flatten the cookies slightly, so they’ll bake a more evenly.

Bake for approximately 10 – 12 minutes.

Let cool in the pan for 5 minutes before transferring them onto a cooling rack.

When cookies are completely cooled, melt the chocolate chips in the microwave in a small bowl, using 30 second increments.


When completely melted, spoon the chocolate into a small sandwich bag that you’ve cut the smallest corner off, to pipe the chocolate all over the cookie tops.

Let the chocolate cool and harden.

Serve and Enjoy!

This most recent batch was made with regular cake mix for the hubby, but I’ve been thinking of trying this recipe with a gluten free cake mix too. I haven’t had a chance yet, and it might take an extra egg or 2, but I think this would work really well! And I can’t wait to give it a try… just have to remember to pick up a mix at the store next time I get groceries!
