There are few things that I love more than bacon, or the smell of bacon cooking, or onions cooking, and luckily this delicious recipe gives me all of those in one, plus a bunch more.
This Bourbon Bacon Jam is perfect for adding to dishes, for making up a batch to gift to any man in your life , or to gift to your favorite hostess during the holidays. Ooorrrr you could just keep it for yourself and enjoy every delicious morsel!
Bourbon Bacon Jam Ingredients:
2 lbs of quality bacon
2 shots bourbon
½ cup honey (local is best!)
¼ cup balsamic vinegar
¼ cup brown sugar
1 ½ large onions
1 T. diced garlic
1 tsp. Chili powder
1 tsp. Ground mustard powder
½ tsp. Sea salt
1 tsp. Ground black pepper
Bourbon Bacon Jam Directions:
Dice the bacon and onions into very fine pieces.
Saute bacon and onions in a cast iron skillet until bacon is crisp and onions are soft and browned over medium high heat. If you would like your bacon a little more crisp saute the onions separately and add them back together, I am about simplicity so I just pop everything in the pan.
Stir in garlic and seasonings, cook for 1 minute, drain as much of the oil off as you can.
Add in bourbon, brown sugar, honey, and balsamic vinegar to the pan, boil for three minutes, stirring frequently, then remove from heat.
You can let your jam thicken and use it as is or transfer half out of the pan into a cup/bowl and process with an immersion blender, then stir the two back together. I leave mine because I like biting into the bigger pieces of bacon and onion. Heaven, am I right?
Transfer to an airtight jar and keep in the fridge for up to 3 weeks, you can also freeze it for up to 3 months and thaw when ready to serve.
This Bourbon Bacon Jam is amazing poured over a cheese ball, served by itself on crackers, piled onto a hamburger,or in a grilled cheese ( May I suggest Gouda?).
