Taco Lettuce Wraps

Living in Texas can be a challenge at times… especially when I am trying to cut back on carbs and eat more veggies! Every where I turn there is delicious mexican food that just begs to be eaten! And, um… HELLO!! Its Delicious!  And loaded with carbs! And I can’t say No! So whats a flavor loving girl to do? Replace the tortilla of course! And honestly, you don’t even miss it with these yummy taco lettuce wraps!

Taco Lettuce Wraps - BusyBeingJennifer.com

Ingredients

1 lb. Ground Beef or Turkey

1 teas. Chili Powder

1 teas. Cumin

½ teas. Salt

½ teas. Pepper

½ teas. Garlic Powder

½ Cup Water

1 Can Black Beans, rinsed and drained

1 Cup Colby Jack Cheese, shredded

1 Avocado, sliced

½ Cup Sliced Black Olives

½ Red Onion, diced

8 Romaine lettuce leaves

Instructions

In a pan over medium high heat brown the meat, drain and return to the pan over medium heat.
Add the Chili powder, Cumin, Salt, Pepper and Garlic powder stir to combine and let cook 1 minute.

Add the water and beans, simmer until the liquid has almost completely evaporated, remove from heat.

To build, start with the lettuce leaf with the concave portion facing up.  Sprinkle 1/8 of the cheese along the center rib, then the meat and beans, the avocado slices, olives and onions.

Serve with sour cream and salsa.

Depending on the day, I can take or leave the beans… but these ingredients combine to pack on heck of a flavor punch! But trust me when I say these Taco Lettuce Wraps with crush any Mexican food craving!

    I feel like a taco is just a vehicle for all he delicious toppings… so putting it on lettuce make so much sense! I’m going to try these next time I make tacos!
