Sweet and Scrumptious Cranberry Bread

Believe it or not, I despised cranberries up until  few years ago. I wouldn’t even have cranberry sauce at Thanksgiving! Then Thanksgiving dinner, not all that long ago, I was given leftovers to take home that had cranberries and sauce on top of all the other goodness. I was forced to try the cranberries along with everything else. Long story short, I fell in LOVE with cranberries! Now I’m tossing cranberries into almost everything! This sweet and scrumptious cranberry bread is soooooo good!

Scrumptious Cranberry Bread - BusyBeingJennifer.com

Ingredients to make your own Scrumptious Cranberry Bread:

2 cups fresh cranberries or 2 cups frozen cranberries, chopped
1 2/3 cups sugar
2/3 cup vegetable oil
1/2 cup milk
2 teaspoons vanilla
4 eggs
3 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt

Directions:

  • Heat oven to 350º.
  • Grease bottom of 10″ skillet.
  • Mix cranberries, sugar, oil, milk, vanilla and eggs in large bowl.
  • Stir in remaining ingredients.
  • Pour into skillet.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes.
  • Top with icing if desired
  • Serve
