Strawberry Chocolate Chip Bread with Chocolate Glaze

Hello there, Busy Being Jennifer readers. Christine from Lattes, Life & Luggage here, back for another recipe to share. With Valentine’s Day coming up, the stores have been filled with chocolate and strawberries. Inspired by these complimentary ingredients, I’ve whipped up a quick bread that is so indulgent you won’t even want a dessert later. This Strawberry Chocolate Chip Bread with Chocolate Glaze will have you drooling in no time!

If you want something slightly less decadent, you can always forgo the chocolate glaze, but I do not recommend that decision. If you need to tone down the chocolate or sweetness level, I would instead recommend topping with simple vanilla ice cream. It will provide the balance you need.

Strawberry Chocolate Chip Bread with Chocolate Glaze

I chop the strawberries by hand very small so they’re more diced than anything. You could halve them or slice them instead. That will give you larger chucks of fruit throughout your bread. You can substitute the chocolate chips for white or dark chocolate as well. If that’s the case, I’d keep the glaze uniform so that there aren’t too many flavors going on.

Allow the bread to cool before applying the glaze. It will speed up the hardening process which will be helpful if you’re planning to serve this sooner rather than later. If you need the glaze hardened even faster, slip the bread in the fridge after applying.

Strawberry Chocolate Chip Bread with Chocolate Glaze

Ingredients
1/4 cup butter, softened
1 cup milk
1/2 teaspoon vanilla
1 egg
1/3 cup applesauce
2 cups flour
1/3 cup sugar
1/2 teaspoon salt
1 cup chopped strawberries
1/2 cup chocolate chips

For the Glaze:
1.5 tablespoons butter
3/4 cup powdered sugar
2 tablespoons cocoa powder
2 tablespoons water

Directions
1. Preheat the oven to 400 degrees and grease a 9×5 inch loaf pan.

2. Beat butter, milk, egg, vanilla and applesauce in a large owl. Slowly add in baking powder, flour, sugar and salt. Mix until well combined. It’s ok if the mixture is still a little lumpy.

3. Gently stir in chopped strawberries and chocolate chips. Pour the batter into a loaf pan and bake for 20-25 minutes until golden brown. A toothpick or knife should come out clean.

4. When the bread has cooled, prepare the chocolate glaze. Melt butter in a small saucepan. Slowly whisk in the cocoa powdered followed by the powdered sugar. Add two tablespoons of water slowly and as needed until desired consistency is reached. For a thinner glaze, you’ll need the full 2 tablespoons. For a thicker glaze, you’ll only need around 1 tablespoon.
