On the hunt for a tasty but easy sheet pan meal for dinner? This recipe for Balsamic Chicken with Roasted Vegetables and Feta is my favorite sheet pan meal of all time!

I don’t know about you, but I haven’t been in the mood to do much cooking lately, baking is a whole other issue… but when it comes to making something for dinner, the easier the better!
Sheet pan meals have become my go to for the nights where I want something hot and delicious but don’t want to go through multiple steps to get dinner on the table.

This recipe is easy to prepare, easy to double up if you’ve got an actual crowd to feed, and oh so tasty!
Even my picky-eater-husband likes this simple recipe! I love that with a little veggie washing, a little slicing and dicing, and a little seasoning goes a LONG way to create a delicious and satisfying meal!
Ready to give this Balsamic Chicken with Roasted Vegetables and Feta sheet pan meal a try? Here’s the recipe!
Ingredients:
3 tomatoes, plum (or whatever you have), cut into chunks
½ onion, cut into chunks and the layers separated
1 sweet pepper, cut into 1″ chunks and de-seeded
4 chicken legs
4 chicken thighs
¼ c olive oil
2 – 3 tbsp. balsamic vinegar
2 tsp garlic powder
as desired salt and pepper
½ c feta cheese, crumbled


Sheet Pan Meal Directions:
Preheat the oven to 350
Prep all your veggies according to above ingredients list
Lay all the cut up vegetables in a baking pan.
Rinse the chicken pieces and season well with salt, pepper and garlic powder.
Nestle the chicken pieces into the vegetables on the baking pan
In a small bowl, combine the oil and vinegar and drizzle it over the chicken pieces
Put the whole tray into the oven and bake for approximately 40 – 45 minutes, or until the chicken is fully cooked and the vegetables are tender.
Allow to the chicken to rest for at least 5 minutes before serving.

To serve: sprinkle some of the crumbled feta cheese on top of the vegetables and then enjoy!

I love how the flavors of the veggies help flavor the chicken as they all roast together! And the veggies themselves are just down right delicious!
I’ve been on a real roasted veggie kick the last couple months, and adding chicken to create a simple, but tasty sheet pan meal is such a no-brainer for me!
