With it being January and the beginning of a new year, I am all about making better choices, being conscious of my sugar intake and trying to eat lots of fruits and veggies. Not that I JUST do this in January, but there is something about a new year and a chance at a fresh start that has me trying even harder than before! Its definitely working too! I am excited to already be seeing some results:) :
For an easy, healthy snack, try this blueberry oatmeal smoothie! Blueberries are rich in antioxidants like vitamin A, vitamin E, vitamin C, copper, zinc, and iron. The rolled oats oatmeal are great for helping to lower cholesterol.
- 1 cup Blueberries
- 1/4 cup Strawberries
- 1/4 cup Rolled Oats
- 2 Small Apples
- 1/2 cup Juice (your choice)
Core each of the apples and chop them into 1/4’s. Remove the tops from the strawberries. Wash all the berries.
Mix all ingredients together (Ninja blenders are my preference) and serve! Add more juice to make it more of a liquid and a little smoother, and less juice to make it thicker.
Please note: regular oatmeal won’t work as well, although it can work if you’re in a pinch. Old-fashioned rolled oats are bigger and thicker than oatmeal and are better for cooking/baking, and provide a better texture.
With a few simple fruit substitutions (1 banana and 1 apple for example), you can change the flavor and texture and give you even more smoothie options. Oranges and Banana’s with a little apple juice is another favorite. Honestly though, this blueberry oatmeal smoothie is definitely my go to!
