Anyway, about me. I’m married to a pro triathlete. I’m also a Nutrition Specialist and Fitness Professional for Endurance Athletes and Gluten-Free My blog is a gluten free guide (for all), and I want to be there to help you maintain proper nutrition as you work to keep your body in top shape for your next race or workout. That’s why I’m called the SHERPA wife; to support and FUEL others!!
I make the fuel, and the refuel, and everything in between!
But the other main reason I blog is support others (and my husband) in pursuing their health and fitness goals.
I’d say my best support comes through fueling, especially with easy gluten free recipes/food!
Let’s talks about the food now, shall we?
You see, In an effort to help James (aka the Kiwi Cotter) fuel properly for pre and post workout, I started making him healthy bites. What are healthy Bites?
Let me tell you all about them!
Healthy Bites are my take on functional gluten free bite sized “ball” snacks. Each bite is made with natural, gluten-free and mostly organic ingredients.
What started off as a real food and gluten free snack option, to help with my personal health and my husband’s training, has now turned into my own little business. I am passionate about it and want to share these bites with others…kids, athletes, on the go mom’s, food allergy folks, and more! My mission is to make gluten free and process free food that actually tastes really good.
Sheesh, do I sound like a Corny Cotter or what? Haha.
Anyway, today I wanted to share with you one of my favorite allergy friendly Healthy Bites recipes!! It’s got all kinds of goodness in it, plus it’s grain free kid friendly!
It’s perfect for post workout, snacking, or just breakfast on the go!! And I’ve got tons more recipes in my Healthy Bites Ebooks, just sayin!
Insert paleo cherry cocoa pistachio bites (collage)
- 1/2 cup coconut flour, peanut flour, or flapjacked buttermilk pancake batter.
- 1/2 cup cocoa powder or other chocolate protein powder
- 1/4 cup nut butter of choice
- handful of dried cherries
- 1/4 cup crushed pitaschios
- butter extract (1/2 tsp) –optional, can use cherry extract or vanilla too!
- 1/4 cup honey or maple syrup
- Optional add ins –> ground ginger or cinnamon
Combine 1/2 cup coconut or peanut flour, 1/2 cup cocoa powder or chocolate protein, 1/4 cup nut butter like eatnuttzo, and a handful of dried cherries and crushed pistachios in a large bow. Mix well. Then add in your honey or maple syrup. Add in a dash of cinnamon or ginger for extra spice Mix again and then roll into bite sized balls. Makes about 15-18 balls. Feel free to roll into larger bites, or smaller to make more. Freeze or keep in refrigerator to maintain freshness.
Nutritional Value: Each bite contains approximately 45-50 Calories and around 2-3 g Protein.
