Mini Rueben Bites

Please tell me I am not alone when it comes to slightly odd cravings? Every once in a while I get an inexplicable craving for the oddest things… Like a rueben sandwich… which I’ve never before been a fan of, but after trying these mini rueben bites, I’m hooked!

Ingredients

1 Baguette, sour dough, small *see note
2 Tbsps. Thousand Island Dressing
8 oz. Corned Beef, sliced
1 C Sauerkraut (room temperature)
6 slices Swiss Cheese
12 Gherkins

*Typically, reubens are made with rye bread. As this is a smaller, bite size recipe and regular rye bread piece are too large, I chose the sour dough baguette. However, you could ask your local baker and  a lot of times they will make you a baguette style loaf of rye if you ask.

Directions

Preheat oven to 350
Slice deli corned beef into long slices, and then cut those slices into ½ inch pieces
Cut 12, ½ inch slices of baguette and spread a dollop of dressing onto each piece.
Divide and pile on the corned beef onto each piece of baguette slice.
Lay the cheese on top of the corned beef and bake in the oven for approximately 10 minutes.
Remove from the oven and place a dollop of sauerkraut on each round. Top each one with a gherkin and then using a toothpick, spear from the top down to hold all the layers together.

Don’t these mini rueben bites look delish? They’re the perfect appetizer to share at a party, brunch  or girls night! These would also be FANTASTIC for the Big Game Day party! These were a big hit with husband, and I am sure they’ll be a hit at your house too!

    I had a big smile as soon as I pulled this up! I LOVE corned beef and I LOVE Reuben sandwich and these are so darling! The pickles alone make it!!
