Gluten Free El Salvadorian Quesadilla

Amazing Products from Mary & Martha
I would love to share with you, a very simple recipe that I recently discovered.   My family was recently at a Hotel El Tejado in Suchitoto, El Salvador and we learned to love quesadilla while there!
Quesadilla is a simple recipe that originates in El Salvador.   Think about a pound cheese cake that goes great with coffee!   This recipe is very simple to make and it is naturally gluten free.

El Salvadorian Quesadilla, Gluten Free
Ingredients:
1 cup of rice flour
1 teaspoon of baking powder
1 pinch of salt
1/2 cup butter
1/2 cup coconut oil
3/4 cup sugar
3 large eggs
1 cup sour cream
1/2 cup Parmesan cheese
Sesame seeds, to taste
Steps to make Quesadilla:
1.  Preheat oven to 350 degrees
2.   Whisk together rice flour, baking powder and salt
3.  Cream butter, coconut oil with sugar and then add eggs one at a time and beat for 1 minute
4.  Add the sour cream, cheese and rice flour mixture and stir until smooth
5.  Spoon into greased muffin tins, filling until almost full as these cakes do not rise very much
6.  Sprinkle with sesame seeds and bake for 15-20 minutes.  Let cool to room temp.

Serve your guests simply with Coffee and Quesadilla for an evening snack!  They will love it and so will you!
I like to serve it to my guests with the Grace & Gratitude collection of coffee mugs and plates, a simple treat that is bound to impress!

    Jennifer, I'm so glad to learn about Mary and Martha- I can't wait to go browse their lovely items! The Gluten Free Quesadilla sounds wonderfully delicious. I like the idea of having a treat that everyone can enjoy!
