It’s FINALLY cool in the mornings around here and there is nothing I love more than a Delicious Pumpkin Walnut Muffin and a cup of hot coffee first thing in the morning! Keep on reading for the full recipe!

Delicious Pumpkin Walnut Muffin

This cooler weather has me getting all kinds of cozy the last few days. I’ve been spending the first hour or so of my morning with a good book, a hot cup of coffee and one of these tasty muffins. Lately, for some reason, I’ve needed to start my mornings a little slower than usual. Sleeping in an extra 15 minutes, reading for a bit before work and relaxing before I jump into the to-do list has actually made me MORE productive when its all said and done.

Maybe it’s the pumpkin spice, or maybe its actually eating breakfast for a change, but whatever the reason, these yummy muffins are the perfect way to start the day!

Delicious Pumpkin Walnut Muffin Recipe Ingredients:

1 C Whole wheat flour
1 C AP flour
¼ tsp Baking soda
1 tsp Baking powder
½ C Brown sugar
1 tsp Salt
1 ½ tsp Pumpkin Spice
¼ C Oil
¼ C Applesauce
¾ C Pumpkin puree
1/3 C Milk
2 Eggs, whisked

Delicious Pumpkin Walnut Muffin Recipe Directions

Preheat the oven to 350 and grease or line muffin tins.
1. Mix all dry ingredients together
2. Mix all wet ingredients together
3. Mix the wet ingredients into the dry until just combined
4. Add in the walnuts, fold in without mixing too much.
5. Fill muffin wells to 2/3 full
6.  Bake at 350 for 30 – 35 minutes or until an inserted toothpick comes out clean.

I’ve been on a pretty solid Pumpkin Spice and Pumpkin flavored everything lately… it’s just that time of year. These yummy muffins are the best of both! And yes. I’m “basic” like that 😉
