Crock Pot Beef Stroganoff

Last week when hubby was home I finally got to do some “real” cooking. When its just me, I do the minimum and whip up pretty basic meals, or eat salads all week long. But when he’s home, especially after being gone for a long time, all he wants is some hearty home cooked meals. One of his favorite meals is beef stroganoff… Only this time, I changed things up a bit and made crock pot beef stroganoff! It was a huge hit!

The best thing about making this in the crock pot is that it freed me from slaving over the hot stove and allowed me even more time with my handsome man 🙂 Not to mention that it helped avoid heating up the kitchen! Prep time in the morning was 10 minutes. Prep time in the evening was about 20 minutes.

Ingredients:

2 pounds beef stewing meat
2 cans condensed golden cream of mushroom soup
1 large chopped onion
1/4 cup of water
3 Tablespoons of Worcestershire sauce
1 Tablespoon chopped garlic or 1 clove, minced
1/4 teaspoon salt and pepper
1 8 oz. package of cream cheese, cubed
2/3’s of  a cup of sour cream

In a 3 1/2 to 4 1/2 quart crock pot combine the cans of soup, chopped onion, water, worcestershire sauce, garlic and salt & pepper. Whisk together until completely blended. Then mix in the meat until all of the pieces are coated with the mixture. Cover and cook on low for 8 to 10 hours.

20 minutes before you’re ready to eat, stir in the cubed cream cheese until melted. Once the cheese is melted stir in the sour cream. At this point I added in a few more seasonings (hubby likes things spicy), 1/4 tsp. chilli powder, 1 tsp cajun seasonging and a little more salt.

Serve over egg noodles or rice.

    I love, love, love my crock pot! I enjoy making meals on the weekends and then using leftovers all week for lunches…I am certainly going to try this recipe, it looks so yummy and sounds very easy! Thanks for sharing!

    I love stroganoff but you know I actually do it with no sour cream and it's just as good. Call it un-sour stroganoff LOL! Pinned 🙂
