Easy Chili Corn Chip Casserole Recipe for Game Day

Perfect as an appetizer or a crowd-pleasing main dish, this dish is packed with flavor and excitement. With just a few simple ingredients, you’ll be able to create a winning dish that will have everyone cheering.

Believe it or not, I am the Football fan in this house! The Hubs could honestly care less about sports – He’s a rodeo kinda guy, but thats a whole other post ;).  I grew up watching NFL games, during the season, every Sunday with my dad. It was one of my favorite things about the fall/winter! He instilled his love for the game in me and patiently (usually) answered my MANY questions about the game, the calls that were made, the plays and the teams. While we didn’t always agree on which was our favorite team, we always agreed that watching football was the best way to spend an afternoon!

These days, I’m usually watching on my own, but that doesn’t stop me from having a game day party of my own each week! One of my favorite snacks/meals to much on is this tasty Chili Corn Chip Casserole!

Here’s what you need to make this tasty dish:

Ingredients:
1 pound ground beef
1 cup chopped onion
1 package chili seasoning mix
1 6-ounce can tomato paste
3/4 cup water
4 cups corn chips
16 ounce can pinto beans
1 cup sliced black olives
2 cups shredded Cheddar cheese
Jalapeño slices, optional

Scrumptious Chili Corn Chip Casserole - BusyBeingJennifer.com

Directions:
Brown beef in oven-safe skillet. Add in onion, chili seasoning, tomato paste and water. Heat on simmer for 10 minutes.
To use one dish, move 1/2 of the chili mixture over to the side of pan (or scoop out into a bowl) and add 1/2 of the corn chips, 1/2 of the beans and 1/2 of the olives and cheese on top of the half of the chili mixture left in the pan. Net, top that layer with the remaining 1/2 of the chili mixture. Add the remaining beans and olives. Top with remaining 2 cups of corn chips, and then the remaining cheese.
Cover with foil.
Bake in a preheated 350-degree oven for 30 minutes. Uncover, and then bake for an additional 10 minutes.

    This looks amazing and I love that it uses fresh ingredients – so often I see recipes like this that are so full of packets and I worry about sodium and additives!
