I can’t remember if I’ve mentioned this before, but my hubby is a bit of a picky eater, so cooking is a little bit of challenge. Of course his pickiness is complicated by the fact that I am trying (and sort of succeeding) to lose weight. I recently bought a new Weight Watchers cookbook and its been a big hit with both Hubby and I! And he doesn’t even realize he’s eating healthier!! Score!

Today I want to share with you one of our favorite recipes! Cheddar-Scallion Popovers!

Cheddar Scallion Popovers - BusyBeingJennifer.com

Ingredients:

1 2/3 cups low-fat (1%) milk
1 1/2 cups all-purpose flour
3 large eggs
1 teaspoon salt
1/4 teaspoon cayenne
1 1/2 cups shredded reduced fat cheddar cheese
1/2 cup finely chopped scallions (about 4 scallions)

1. Preheat oven to 450 degrees. Lightly spray 12 cup popover or jumbo muffin pan with nonstick spray

2. Combine milk, flour, eggs, salt and cayenne in blender; blend until smooth. Pour into large bowl.

3. Stir 1 cup of cheddar cheese and scallions into batter.Pour 1/3 cupfuls of batter into prepared popover cups. Sprinkle evenly with remaining 1/2 cup of cheddar.

4. Bake popovers for 15 minutes. Reduce oven to 375 and bake until golden brown, 8-10 minutes longer. Serve hot.

1 popover has 115 calories. 3 g total fat,14 g carbs, 8 g protein and only 3 WW points Smile

I like to make 2 dozen at a time and then freeze the extras 🙂 They make a great addition to just about any meal! Prepare yourself for the yumminess!!
