2 Ingredient Coconut Macaroons

I’m not usually much of a coconut fan, but for some reason around the Holidays I simply MUST make one of my Mom’s favorite recipes. And lets face it, with only 2 ingredients, there really isn’t much of a  reason to NOT make them! Oh and licking out the bowl afterwards is a definite pro 😉 So quick! Grab what you need, its time to whip up some 2 Ingredient Coconut Macaroons!

2 Ingredient Coconut Macaroons - BusyBeingJennifer.com

All you need is a can of sweetened condensed milk (14 oz)  and 14 ounces of sweetened coconut flakes. Mix the 2 together in a bowl. Scoop a tablespoon of the mixture and drop on a greased or parchment lined cookie sheet. Bake at 350 degrees for approximately 10 minutes. They should just be a little toasty on the top.

These turned out perfectly! They are just the right amount of toasty on top and soft, sweet, coconut gooey-ness inside! Of course you can always add a little melted chocolate drizzle on top too 🙂 You really can’t go wrong with coconut and chocolate!

I whipped up this batch so that I could take a sweet treat to my amazing Postal Workers 🙂 I’ve spent a LOT of time there this Holiday season and they definitely deserve a little something from me! A dozen or so of these coconut macaroons and some pretzel almond bark… I should be their favorite customer by the end of the day 🙂

    I used to have treats I made every year but it's hard when it's your turn to go out of town for the holidays. :/ I did make some banana bread this weekend. Super yummy!

    Wow, I would have thought these took more than 2 ingredients! My husband loves coconut, and we actually made some macaroons just like these this week. This recipe may replace mine though!

    These are some of my husband's favorite treats. He asks me to make them for Christmas every year 🙂 My other must-make treat is my Mom's recipe for Rocky Road Squares.

    I made these to take to my in-laws for Christmas Day. I am not a big coconut lover, but they are, and they were a big hit. So easy! I need easy during the Christmas season!

    I had no idea you make coconut macaroons with 2 ingredients. I definitely will have to try this recipe. Coconut is a favorite of mine.
