Have you ever had an idea for a recipe and in theory it sounds pretty good… but then you start to second guess your idea and potential ingredient choices?? You Finally decide to just do it, and it turns out 47843743 times better than you ever thought it would? Such is the case with this Paleo Tuna Thai Stir Fry with Zoodles! In fact, it turned out SO good that since perfecting the recipe, I’ve made it again!

The tuna and veggies combine with the thai inspired spices to create one heck of a flavor party in your mouth! If you're eating gluten free or a paleo diet, you're gonna love this recipe! Even if you're not, this Paleo Tuna Thai Stir Fry with Zoodles recipe will please your taste buds and probably the whole family too!

Not only is this Paleo Tuna Thai Stir Fry with Zoodles is super tasty, its incredibly easy and SO good for you! This recipe is Paleo and Gluten free, packed with vegetables and all the goodness of REAL  Solid White Albacore Tuna.

The tuna and veggies combine with the thai inspired spices to create one heck of a flavor party in your mouth! If you're eating gluten free or a paleo diet, you're gonna love this recipe! Even if you're not, this Paleo Tuna Thai Stir Fry with Zoodles recipe will please your taste buds and probably the whole family too!

Ingredients:

2 Cans of Bumble Bee® Solid White Albacore in Water
1 Bag of Frozen Stir Fry Veggies (Or the equivalent in fresh veggies)
2 Tablespoons Coconut Oil (divided)
Fresh Basil Leaves
4 medium zucchini squash
1/4 tsp cardamon
1/2 tsp white pepper
1 tsp tumeric
3/4 tsp ginger
1 1/4 tsp garlic powder (divided)
salt

Directions:

In a large Wok or large frying pan, heat 1 Tablespoon of coconut oil and add in the stir fry veggies. Heat through, then add the spices, saving 1/4 tsp of garlic. Stir it all together and then add in 1 and a half cans of the Bumble Bee Tuna. Add salt and additional white pepper to taste (more white pepper if you like spicy food!)

While your stir fry is stir frying, turn the zucchini squash into “zoodles” with a spiralizer tool and chop some fresh basil. Toss both, along with a tablespoon of coconut oil into a frying pan to saute. Season with a dash of salt and 1/4 tsp of garlic powder. This only takes 4 to 5 minutes so be sure to stir them often and supervise closely. Over cooking makes your zoodles soggy and mushy.

Plate your zoodles and spoon a little of the coconut oil over the top. Then layer on your veggie/tuna stir fry mixture. Top with a little more tuna (if desired) and garnish with fresh basil leaves.
