I wanted a quick lunch that was a little outside the ordinary for me—and the idea of Mediterranean Red Pepper Tarts sounded so good, I had to run to the kitchen.
Sure enough, I had everything I needed and I got my Mediterranean Red Pepper Tarts into the oven within just a couple of minutes.
In the time it took to get them baked, I was able to clean up my kitchen from the small mess I’d made and my morning coffee then it was time for my lunch.

And it was totally worth the wait. Soft, moist, spotted with familiar flavors of pizza, but in a much more lunch-sized portion for me than ordering out, these Mediterranean Red Pepper Tarts are coming up on one of my favorite lunchtime meals.

What You Need to Make Mediterranean Red Pepper Tarts
- 1 sheet puff pastry (1/2 17.3 ounce package), thawed but chilled
- ½ cup roasted red peppers
- ½ cup Kalamata olives, pitted
- ½ cup feta cheese, crumbled
- 2 tablespoons olive oil, divided

How to Make Mediterranean Red Pepper Tarts
Preheat oven to 375 degrees F.
Prepare a baking sheet with parchment paper.
In a mixing bowl, add olives, red pepper, feta and 1 tablespoon olive oil. Mix gently and set aside.

On a lightly floured work surface, unfold puff pastry sheet.
Using a lightly floured rolling pin, roll out sheet until 8”x 12” rectangle.
Cut into 6 equal rectangles.
Score a ½ to 1 inch border inside the pastries.
Poke with a fork inside the border about 7 times.
Brush border with olive oil.

Bake for 8 minutes.
Remove from oven and press center rectangle down with a fork.

Fill center rectangle with olive mixture.
Bake for 12 minutes or until border is golden brown.
Remove from oven and allow tarts to cool for 10 minutes on baking sheet before serving.

And that’s it! You’ve got an amazing appetizer or small meal. It’s such a great idea and so full of flavor, I just love it.
Not gonna lie, either, if you store the leftovers in the fridge in an airtight container, you can reheat them the next day for lunch and they’re amazing.
