I wanted a quick lunch that was a little outside the ordinary for me—and the idea of Mediterranean Red Pepper Tarts sounded so good, I had to run to the kitchen.
Sure enough, I had everything I needed and I got my Mediterranean Red Pepper Tarts into the oven within just a couple of minutes.
In the time it took to get them baked, I was able to clean up my kitchen from the small mess I’d made and my morning coffee then it was time for my lunch.
And it was totally worth the wait. Soft, moist, spotted with familiar flavors of pizza, but in a much more lunch-sized portion for me than ordering out, these Mediterranean Red Pepper Tarts are coming up on one of my favorite lunchtime meals.
I just love biting into a soft, moist mini-pizza customized just for me.
If you’re ready to make a new lunchtime favorite you’re going to love, grab your oven mitts and let’s get making!
