Easy Red White and Blue Parfait

Y’all! This is one of my favorite times of year! Why you ask? Well because its time for fresh berries, berry-licious desserts and everything red, white and blue! Put those all together and you’ve got this tasty, delicious and easy red white and blue parfait!

The tasty cake morsels soak up the raspberry juice for a delicious blend of moist, tart and sweet goodness. The whip cream and blue berries are the perfect topping! And I mean, who DOESN’T love blue berries and whip cream? The whole family is going to love this easy Red White and Blue parfait!

Ingredients

½ 9” cake (can use pre made shortcakes as well)
2 C Fresh blueberries
1 C Frozen raspberries in juice, thawed
2 tsp Sugar
1 tbsp Cornstarch
1 tbsp Water
2 C Whipped topping

Directions

1. In a saucepan, combine the raspberries and sugar. When simmering, add cornstarch and water, allow to thicken and completely cool.
2. Cut the crusts or “bark” off the cake and cut into bitesize cubes
3. For assembly: Begin by putting a few cubes of cake in the bottom of the glass. Cover with ½ C of raspberry sauce. Carefully spoon in whipped topping on top of the raspberries. Next, carefully place blueberries and top with a dollop of whipped topping and garnish with a blueberry. Refridgerate for 30 minutes to 1 hour, and serve. Enjoy!
