There is something about fall that makes me get all bake-y and home-y! I just want to decorate, bake, sew and clean! I’m gearing up for some diet changes and stocking my freezer with some healthier comfort food options and I started with these super yummy Cranberry Orange Muffins!
Cranberry Orange Muffins Ingredients:
2 cups of Flour, sifted
3/4 honey
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1/2 cup of dried cranberries
1 egg
1 cup of orange juice
1/4 cup of unsweetened applesauce
1 teaspoon of grated orange peel
Directions:
Preheat the oven to 400.
Combine all of your dry ingredients, set aside.
In a separate bowl combine egg, orange juice, and the orange peel and beat until mixed well.
Add the all of the dry ingredients at one time and stir just enough to moisten the dry ingredients.
Spoon batter into your muffin cups.
Bake for 15 to 20 minutes, let cool.
These muffins will freeze well for up to 3 months! I put 2 in individual ziploc bags and then put them inside of a large freezer bag. All I have to do when I am in the mood for one of these scrumptious cranberry orange muffins is grab a bag out of the freezer and let it thaw! So easy! And So delicious!
