Cocopine Popsicles. You’re probably sitting there, thinking to yourself, “What the HECK is Cocopine? And why do I want a popsicle version of it?” Well let me tell you my friends, it is the most perfect blend of pineapple, coconut and banana! Now doesn’t that sound delicious! Well it is! It makes a great smoothie combination, but its even better as cocopine popsicles!

They look DELISH right? Here’s how you can make your own Cocopine Popsicles!

Ingredients

1 ½  Cans             Pineapple chunks
1 Can                     Coconut Milk/Cream
1                              Banana, ripe
½ C                         Pineapple Juice
¼ C                         Rainbow Coconut

Directions

In a blender, combine pineapple chunks, coconut milk, banana and pineapple juice.
Blend very well
Add the Rainbow Coconut (can also use regular coconut)
Blend very well
Pour into popsicle moulds and freeze

Don’t these cocopine popsicles look delish! They’re the perfect way to cool off on a hot day and enjoy a tasty, fruit filled and creamy treat! And I’m totally in LOVE with this flavor combination! So in love in fact that I’ll be back next week with a special cocopine smoothie! Ya’ll are gonna love it!

    Yum! I’m a massive coconut fan, and these look super yummy! I’d never even heard of rainbow coconut, but I can certainly make these with regular coconut, so these are on my to-do list once I break out my popsicle molds for the summer! 🙂 Lisa
