I’ve come a long way in my eating habits! Just ask my health coach! I’ve been gluten free since January (with the exception of a few small slips) and despite the extra time and effort it takes, the difference its made for my health has totally been worth it! And honestly now that I’ve grown accustomed to a different way of viewing food and making some simple substitutions, being gluten free is almost easy!

Avocado Tuna Salad:

Ingredients:

1/4 cup orange or red sweet bell pepper, finely chopped
1/3 cup cucumber, finely diced
1/3 cup green onion, finely sliced
1/2 lemon, juiced
2 avocados
2 cans of Bumble Bee® Solid White Albacore
Salt and Pepper

Directions:

Chop all the vegetables. Set the aside.

Remove the skin and seed from the avocados and mash them in a medium sized bowl.

Mix in the chopped vegetables.

Drain the cans of Bumble Bee® Solid White Albacore, and add to the avocado and vegetable mix.

Add the lemon juice, and season with salt and pepper to your preference.

Mix it all together!

    This looks so tasty! I love the fresh flavor that avocado gives to a dish. My girls really love avocado and tuna so I will have to give this one a try – would make a great weekend lunch when we are just lounging around the house.

    I am normally not a big tuna salad fan because of the Miracle Whip or Mayo. I really like how fresh this is with the avocado and think this would be something I would like. I will be making this really soon.

    I’m trying to eat healthier and sometimes I just get bored. This just sounds amazing!!! I love avocado anyway, but paired with tuna and zucchini chips? Yum!! This might just become my new favorite lunch!

    What a great combo! I actually make both of these recipes often, but never together!! I usually dip the zucchini crisps into dip, but not a salad like this. These have all the flavours and foods I love!

    This sounds awesome! I love avacado but I never would have though to mix it with Tuna?!! And I love adding the baked zucchini chips – like a little cheat but not really! Sounds like a perfect lunch or light summer dinner!

    Just made this for lunch…wow! It’s so fragrant and full of flavor. I love the crunch that the onion and cucumber provide along with the creaminess of the avocado. The tuna makes it perfectly filling. Awesome recipe!
