I don’t know about where y’all live, but it is HOT in Texas right now. Too hot for this northern born girl to be honest. If it wasn’t for air conditioning and cold treats like these Apple Mango Yogurt Pops, I’d have given up on this state a long time ago!
Lucky for me, these Apple Mango Yogurt Pops are the perfect cold, sweet(ish), and healthy treat to keep from over heating during these 100+ degree day’s we’ve been having!
And lucky for you, I’m sharing this easy and healthy recipe so you can make your own… because who doesn’t need a cool tasty treat on a hot summers day?
Apple Mango Yogurt Pops Recipe:
Ingredients:
- 3/4 cup mango, peeled
- 1 apple, peeled and diced
- 3/4 cup plain greek yogurt
- 2 tablespoons chia seeds
- 1/2 cup coconut water
- 2 dates, soaked for twenty minutes in warm water
How to Make Apple Mango Yogurt Pops
First things first! You’re going to want to soak your dates for at least 30 minutes to an hour before adding them into your popsicle mix.
While the dates soak, it’s time to chop and prep all your fruit in to 1 inch (or smaller) chunks. This only takes a few minutes, but makes the process of blending your popsicle ingredients much smoother.
Next measure out the portions you need for the yogurt and chai seeds.
The easiest way to blend this all up is in a blender, although a food processor would also work.
Put all ingredients into your machine of choice and blend until full combined. You can expect this to take 1 to 3 minutes depending on how long you let your dates soak and how small you chopped your fruit.
When the chia seeds are fulled blended into the mixture, you’re good to go!
Carefully pour your mixture into the popsicle molds, taking care not to over fill – don’t want to waste a single drop of this yumminess!
Add your popsicle sticks or popsicle mold caps and carefully place into your freezer, ensuring that the molds are level.
Now comes the hard part… waiting for them to freeze completely! Depending on the size of your mold and the efficiency of your freezer, you can expect these to take about 4 hours to thoroughly freeze. So plan accordingly!
This recipe makes 6 tasty and refreshing popsicles.
Even my hubby likes these fruity popsicles! And I normally can’t sneak “healthy” things past him. I think that he just enjoys the cold, creamy deliciousness!
I can’t officially claim that these are kid-approved… you know, since there are no kids around this house, but if my SUPER picky eater of a husband liked them, then I’m pretty confident that these will pass the kid-friendly test!

Apple Mango Yogurt Pops

Ingredients

Instructions
Prep all ingredients. Chop the apple and mango and portions the yogurt, chia seeds and water. Soaking the dates a head of time makes them easier to blend.
Put all ingredients into a powerful blender and blend until full combined (1-3 minutes).
Pour the mixture into the popsicle molds taking care not to over fill.
Replace each mold with a stick/cap and place in the freezer for four hours to set fully.
Makes 6 popsicles.
