There are days my friends. DAYS. You know the kind of day where, nothing goes the way you plan and by the end of the craziness you just need some sort of tasty comfort food? Well I had one of those days recently and at the end of it I was craving pie! No Bake Pumpkin Pie to be exact!
And it turned out deliciously!

No Bake Pumpkin Pie:
Ingredients
2 Cups Canned Pumpkin
1/2 Cup Sugar
8 oz Cream Cheese Softened
2-8 oz Cool Whip or other Whipped Cream
1 Tbsp Cinnamon
2 Tsp Pumpkin Pie Spice
1 Tsp Nutmeg
1-3.4 oz box Instant Vanilla Pudding
1 Cup Milk
2 Pre Made Graham Crusts

Top Layer
Mix your pudding and milk and stir until thick.
Add in 2 cups canned pumpkin.
Add in your Pumpkin Pie Spice, Nutmeg, and Cinnamon and stir until well blended.

Bottom Layer
Add your cream cheese, sugar, and half of one 8 oz tub of whipped cream in a separate bowl and blend well with hand or kitchen mixer.
Fill half of your pre-made graham crust with the bottom layer mix and then fill remaining space with top layer.
Refrigerate for at least an hour before eating so it has time to set completely, 4 hours to over night is better.
This recipe makes two pies and you will have extra whipped cream to either cover the top of each pie or use as needed/wanted. ( This is great on other pies or fruit!)

Doesn’t this No Bake Pumpkin Pie look amazing? Its been a hit with the family every time I’ve served it as well! Not to mention it REALLY hit the spot the other day when I was craving something fall and sweet and comforting!
