A conversation with a friend the other day sparked a yummy meal idea! 10 minutes later I had chicken marinating and oh boy did this idea pan out! You’re gonna love this Feta and Dill Marinated Chicken!
Living in a teeny-tiny Texas town, I have very few options when it comes to dining out. Our choices are limited to Mexican or Italian. Most of the time, I’m ok with these, but every once in a while I get a deep down hankering for some good Greek food! There was this fantasitc greek restaurant in the town I grew up in and sometimes I miss it very much! It wasn’t until recently that I could even get a good greek style salad dressing here! I’d tried making my own, and it just wasn’t the same… A few months ago I stumbled upon Litehouse’s OPA Feta Dill Greek Yogurt Dressing and its my new go to for yummy salad!
This recipe is simple, but the flavors are amazing!
Ingridents:
1/2 cup Whole Milk
4 Tblsp Opa Feta & Dill Greek Yogurt (by litehouse) dressing
1/4 tsp Garlic Powder
1/4 tsp onion powder
pinch of salt
4 boneless skinless chicken breasts
Place all ingredients, except chicken, in the blender and mix until smooth. Place chicken in ziploc bag and pour marinade mixture over. Seal bag and refrigerate for at least 4 hours.
I am fortunate to count a rotisserie among my various cooking tools and we use it quite regularly. These chicken breasts were roasted to perfection in our handy dandy rotisserie. It took about an hour. These would also do very well grilled.
Once the chicken breasts are fully cooked, allow then to rest/cool for 10 – 15 minutes.
Slice and add to your greek salad!!
