I have a few times, this Cherry and Almond Overnight Oats recipe I shared before was pretty good… but you know how it goes, you get busy, you let your bad habits get the best of you, and the next thing you know your average day doesn’t include eating until after noon! Opps!
And yes, I know! Breakfast is the most important meal of the day. Believe me I know! But I wake up, make coffee, let the dogs out, etc, etc, and get right to work… Next thing I know I’m 4 cups of coffee deep into my morning and its almost 12 o’clock and I’m STARVING! So breakfast for me needs to be quick, simple, tasty, and not require a whole lot of time or effort.
And when you’re not a fan of eggs, and have a hard time finding a gluten free protein shake mix that you actually like for smoothies, breakfast is a CHALLENGE.
Part of my focus for 2017, is to RISE above my health struggles. Living with an auto-immune disease is not easy. Running a business, a blog (and a 2nd and 3rd one coming soon!), a handmade shop and a house isn’t easy on my best days, and nearly impossible when my body doesn’t want to cooperate. This Honey Apple Cinnamon Overnight Oats Recipe makes enough for 2 mason jars full of breakfast yumminess and only takes a few minutes to put together.
Honey Apple Cinnamon Overnight Oats Recipe:
2 cups of steel cut oatmeal
1 cup plain greek yogurt
2 apples (grate or fine chop 1, save the other for morning)
1/2 cup milk
2 Tbsp Cinnamon
2 Tbsp Wild Flower Honey
Mix the oats, yogurt, milk, 1 apple (chopped or grated), cinnamon and honey in a bowl. Stir well.
Spoon in to mason jars, and add a little more milk if desired.
Leave in fridge over night.
Before serving, top each mason jar of overnight oats with 1/2 of the 2nd grated apple, a drizzle of honey and a light dusting of cinnamon.
