Family. They’re SO important! And time spent together can’t be beat. I’ve got to tell ya, I hit the jackpot when it comes to in-laws! I married into a pretty cool family and its been so much fun getting to know then over the past 4 years. Its hard to imagine life without my FIL now, but I almost didn’t get to meet him. 6 months before I met my husband, my FIL had a liver transplant! His health was pretty touch and go for a while there, but he pulled through! We celebrated his “liver birthday” this weekend and spent some quality time all together! Oh and there was some really, really good poke cake!

This Cherry Coconut Coke Poke Cake is moist, full of flavor and was a HUGE hit with my family! I’d been playing around with this recipe idea in my head for a while, so When my MIL mentioned that my FIL’s “Liver Birthday” was coming up, I exactly what to make! So off to my local Brookshire’s I went for some cokes and the other  necessary ingredients 🙂

I grabbed some cokes to share, pudding mix, jello and a few other things to complete the recipe. Annnnnddd I might have grabbed a coke with my name on it for the drive back home 🙂

It was a perfect afternoon, sharing some cokes, cake and memories with my Hubby and In-Laws. And all in all I’d say it was a successful and tasty “Liver Birthday”! Even my uber picky-eater husband liked this coke poke cake!

    That sounds interesting for sure! Is the Coke a very strong taste in the cake? I like the combination of cherries and coconut too!

      Honestly, its kind of just a little coke aftertaste. I personally would have preferred more coke to cherry flavor, but it was REALLY good! And its still more cake taste to cherry/coke than anything else 🙂
