One of my favorite things to bake and eat is banana bread especially, if its chocolate chip banana bread! My Nana used to make the best breads you ever did taste, but the banana one was especially delicious. I think it’s because of all the love she put into the things she made to share with her family 🙂 Hubby and I share a love of banana bread, so as a special treat I whipped up a double batch… Chocolate chips for me, regular for him 🙂

Pre Heat oven to 350 degrees. Grease 2 bread pans.
6 mashed bananas (I always use ones that get over ripe and then stuck in the freezer, just like my Nana)
3 Eggs
2 cups white sugar
1/4 cup milk (or water)
1/3 cup butter, melted, and allowed to cool
3 tsp. pure vanilla
1 tsp. salt
3 tsp. baking soda
3 – 3 1/2 cups of flour
1 cup chocolate chips (optional)
In a large bowl mix the bananas, eggs, sugar and butter. Mix well. Stir in milk and vanilla, until blended. In another bowl mix the dry ingredients. Slowly blend the wet and dry ingredients together until completely mixed. Gently fold in the chocolate chips.
Pour mixture into the 2 greased bread pans.
Bake for 30-35 minutes or until an inserted toothpick comes out clean.
Allow to cool and enjoy!
Hubby told me I’m “the best wife ever!” for making one of his favorite treat! Makes heating up the house a little bit in this 80 degree (that’s Texas’ version of “fall” for you!) weather completely worth it!
